Kadhai Paneer
This is one of the hit recipes that I've made... There is never any part of it left after the party or dinner or lunch... One time, I landed up getting just one spoon of it for myself... TRY IT!
INGREDIENTS- Paneer - 100 gms - cubed (can use frozen paneer.. If you are using frozen paneer then put them in hot water for 5 mins before you add it.)
- Capsicum - 2 - cut into squares
- Onion - 1 - cut into quarters ans each layer separated
- Tomato - 2 - finely chopped / pureed
- green chillies - 2 to 4 - chopped
- coriander powder - 2 tbsp
- chilly powder - 1 tsp
- ginger - half inch - julienne / chppoed
- garlic - 1 - 2 cloves / half tsp - chopped
- oil - 4 tbsp
- kasoori methi - 3 tbsp
- salt to taste
- Coriander leaves - chopped
Heat 2 tbsps of oil and add the cut capsicum & onion and saute till the onion is translucent. Keep aside
Add the remaining oil in the pan after its heated add the chilly, garlic & ginger. Cook for sometime then add the onion & capsicum and the chilly & coriander powder. Mix it well and leave for a min.
Now add the tomato and cook till the raw smell disappears and the oil separates.
Add kasoori methi & salt... stir well... Then add the paneer pieces & mix till the paneer is coated with the masala.
Close the lid and leave 5 mins on low fire.
Garnish with chopped coriander leaves.
Serves 3 - 4 people... goes great with hot with rotis, chappatis, phulkas or parathas
VARIATION
- The spices can be adjusted according to taste.
- You could add vegetables like carrot, peas & potatoes and make Kadhai Vegetable in case you are out of paneer.
- You can use all the three coloured capsicums to add more colour to the dish.
