Caramelised Onion & Mushroom Puff Pizza

One of my many experiments with puff pastry. The toppings could change but the crust will remain puffy and flaky and yummy. The caramelized onions have a slight sweetness to it and the chilly adds to the punch. You can eliminate the chilly to make it kid friendly.



Prep time - 10 - 15 mins (includes cooking time)
Cooling time - 5 mins
Baking time - 10 - 20 mins (depending on the oven)
Makes 1 pizza

INGREDIENTS

  • Frozen Puff Pastry sheet - 1
  • Brown onion - 1 medium sized - sliced lengthwise
  • Mushrooms - 5 - 6 - sliced
  • Italian mixed herbs - quarter spoon (can use only one herb like oregano if you are out of mixed herbs)
  • Garlic - 1 or 2 pods - crushed
  • Chilly - 1 - sliced (optional) (can substitute with chilly flakes)
  • Salt to taste
  • Olive oil - 1 tbsp
  • Pasta / Tomato / Pizza Sauce - 2 tbsp (optional)
  • Cheese - handful for garnish
METHOD
  • In a pan add oil. As it gets heated add the herbs, garlic and chilly and saute for a few seconds.
  • Add the sliced onions and salt and saute till the onions become lightly brown i.e., start caramelizing.
  • Add the mushrooms and saute for another 2 minutes
  • Set the mixture aside for cooling.
  • On a baking tray line up a sheet of baking paper and place the frozen puff pastry sheet.
  • Spread the sauce in the center of the sheet leaving an inch from all sides.
  • Now spread the cooled onion and mushroom mixture on this and top it with cheese.
  • Bake it in a 200 degree oven for 10 - 15 mins... till the outer sheet puffs up and turn golden brown and the cheese on top has melted.
VARIATIONS
  • The toppings can be whatever you want... onions, peppers, tomato, pineapple, etc etc... Just make sure that its something heavy... if its only cheese in the center the whole thing will puff up (like puri... that's another recipe)
  • You could change the base sauce too... sweet and sour or barbecue or chilly... whatever you think will compliment the topping.
  • If you don't have chillies to saute you can top up with pickled jalapenos.
