Phirni... creamy rice delight!

This is a simpler vertsion of kheer... very easy to make & tastes amazing...

INGREDIENTS
  1. milk - 1 liter
  2. rice - 3 tbsps
  3. roasted mixed nuts (any of the three or combines almonds, walnuts, cashew) - handful - chopped (blend them very corsely)
  4. raisins - few (optional)
  5. saffron - few strands (optional)
  6. sugar - 1 cup - increase or decrease as per you liking.
  7. cardamom powder - 1 tsp
  8. clarified butter (ghee) - 1 tsp (optional)

METHOD

Soak the rice in water for atleast 40 mins after which make a paste with little water & keep aside

Boil milk after its heated up add the rice paste

Keep stiring... when you see that the milk has become thick (as the rice gets cooked) Add the sugar, the nuts and the cardamom pwd & stir to dissolve the sugar

Fry the raisins in the clarified butter (ghee) till they puff up.. add to the milk mixture

Garnish with some chopped nuts & the saffron strands.

Best is served cold

VARIATION

  1. You can use jaggery (unrefined brown sugar) instead of sugar
  2. Incase the cashews are old you can also roast them like the raisins to add more flavour
  3. You can soak the saffron in little water for a few mins & add that to the milk mixture
