Alu Methi

INGREDIENTS
  1. Potatoes - 4 medium size - boiled & cubed
  2. Methi / Fenugreek leaves - 1 sprig - chopped or 1 cup kasoori methi (soaked in water)
  3. Onion - 1 medium size
  4. Green Chillies - 2 - chopped
  5. Haldi / Turmeric pwd - 1/2 tsp
  6. Salt to taste
  7. Jaggery / unrefined brown sugar - 1 tbsp (optional) - helps removing the bitter taste of the methi leaves.
  8. Oil - 2 tbsp
METHOD

Heat oil in a pan and saute the onions & green chilly. After the onions turn transparent add the methi leaves, haldi powder, salt and a little water...

Let the leaves boil and then add the potatoes and cook till they are done.
