Alu Methi
INGREDIENTS
Heat oil in a pan and saute the onions & green chilly. After the onions turn transparent add the methi leaves, haldi powder, salt and a little water...
Let the leaves boil and then add the potatoes and cook till they are done.
- Potatoes - 4 medium size - boiled & cubed
- Methi / Fenugreek leaves - 1 sprig - chopped or 1 cup kasoori methi (soaked in water)
- Onion - 1 medium size
- Green Chillies - 2 - chopped
- Haldi / Turmeric pwd - 1/2 tsp
- Salt to taste
- Jaggery / unrefined brown sugar - 1 tbsp (optional) - helps removing the bitter taste of the methi leaves.
