Simple Sweet Corn Veg
"This is a very simple & quick recipe... it will take most of 25 mins to make a hot pot of sweet corn soup... you will love it especially on a cold day!"
INGREDIENTS
- Corn kernels - 1 cup or 1 tin (if you are using fresh corn then steam / pressure cook)
- Spring onion - 4 - 6 - chopped
- Carrot - 1 grated
- Cabbage - 1/3 cup - grated
- Beans - 1/3 cup - chopped
- Corn flour - 2 tbsp
- Salt to taste
- Pepper - half tsp
- Garlic paste - half tsp
- Olive oil - 1 tbsp
- Vegetable stock cube - 1
- Green chilli - 1 - chopped (optional)
- Water - 3 cups
In a pan, heat oil add ground pepper, chilli and garlic paste.
After a little time add the veggies and saute for a while.
Then add the water, salt and the vegetable stock cube.
Cook for about 5 - 7 mins on medium flame.
Now add the cornflour to the mix so that there are no lumps. You could pre mix the cornflour will some water & then add to the mix so that there are no lumps.
Cook till the veggies are cooked and the soup boils.
Garnish with coriander leaves and serve hot with vinegar, soy sauce, chilly sauce, salt & pepper.
You could also garnish with fried noodles if you like the crunchy taste.
This will serve 2 - 3 people
VARIATION
In veggies you could add baby corn, peas, etc
If you are using creamed corn can then you don't need to add corn flour
