Veg Lasagna

Its simple quick & yummy...

INGREDIENTS
  • Yellow Pumpkin - peeled and cut into cubes - 2 cups
  • Sweet Potato - peeled and cut into cubes - 2 cups
  • Shredded Cheese - 1 or 2 cups
  • Red Pasta sauce - 1 cup
  • Spice mix as per taste
  • Salt as per taste
  • Chilly powder / flakes as per taste
  • Lasagna sheets - 2 or 4 depending on the size of the tray
  • Coriander / Basil leaves for garnish
METHOD
  • Microwave the pumpkin and sweet potato with very little water till its completely cooked & can be mashed.
  • Add salt, chilly and the spice mix powder and half the shredded cheese to the pumpkin & potato mash.
  • Now lay two sheets of lasagna sheets on the tray... add one layer of the mashed mixture then add a few spoons of pasta sauce
  • Add another layer of sheets... mashed mixture... pasta sauce and top it up with the rest of the shredded cheese.
  • Toss the tray in a pre-heated oven for at 180 degrees for 30 mins or till the cheese melts & gets bubbly and light brown.
  • After its done let it cool for a little while then you can cut & serve with a coriander / basil leaf.
VARIATIONS
  • You can make it more spicy or less spicy depending on your taste
  • You could add other veggies like potato or carrots or spinach (boiled & pureed) with or instead of the pumpkin or sweet potato
  • Use low fat cheese to make it more health friendly
