Veggie Chapati / Roti - loads of variations
No time to make a paratha but like some veggies in your rotis? This is a easy way to add veggies to your rotis
INGREDIENTS
- Wheat flour - 2 cup
- Salt - little
- Oil / Ghee (clarified butter) - 1 tbsp
- Vegetables (carrot / peas /cabbage / potato) - 1 cup (more or less depends on you) - boiled with a little salt & mashed
- Chillies as per taste (optional)
- Coriander - finely chopped - as per taste (optional)
- Garam Masala - 1 tsp (optional)
- Water to knead the dough
- Extra wheat flour to dust the dough while rolling
Add all ingredients together in a mixing bowl & knead it well. Dont make it too tight or too loose... The dough should be soft to touch & pinch but shouldn't stick to your hand when you touch it.
You can adjust wheat flour and water. After kneading leave it in a moist muslin cloth for a few mins before making the chapatis
Make lime sized balls out of the dough and with a rolling pin roll it out flat... Try to keep it a little thick especially with chunky veggies...
Cook it in a hot tava (pan). You could add sprinkles of ghee while in the tava.
VARIATIONS
- Spinach - if you are using spinach leaves then puree then with a little water & then add this to the flour
- Tomato - cook the tomatoes in some oil with some cumin seeds (jeera) salt and chilly before you add it to the flour... You could also add some chopped onion to the oil saute, then add the tomatoes.
- Onion - Chop it up into fine pieces and add to the dough... add finely chopped coriander and chopped green chilly with it...
- Mint - Puree it and add it to the dough if you like the taste of mint... you could add salt, chillies & ginger while making the puree to make it a little spicy.
- Paneer - cut it into very small pieces add chopped coriander, salt, chilly powder, garam masala and add it to the dough... you could add the paneer pieces into a sauted onion & tomato mixture.
