Egg less Chocolate Chip Cookies
I had an itch to have cookies today... googled a few recipes then combined a few things from different recipes & made this one... it was very good & chewy!
INGREDIENTS
- 125 gms - Unsalted Butter (room temperature)
- 1/4 cup - sugar (I used raw sugar)
- 1 Tsp - Vanilla essence
- 1 cup - all purpose flour
- 1 pinch baking soda
- 1 cup chocolate chip (I used dark chocolate)
- 1/2 cup - nuts - almond/ macadamia/ walnut / pecan (optional)
METHOD
- Pre -heat the oven 250 degrees (fan -forced)
- Make sure that the butter is soft so that it will blend easily.
- In an mixer or with the whip attachment of a blender blend the sugar & the butter till it combines well and becomes a little fluffy.
- Add the vanilla essence to this blend and mix well.
- Sift the flour with the baking soda and mix that to the butter mix
- Once the flour is combined well with the butter add the chocolate chips and the nuts.
- You can use whole nuts or chopped nuts. I used whole almonds.
- After it is combined make small lime sized balls with the dough.
- Place these on an ungreased baking paper 3 to 4 inches apart and flatten them a little with your hands
- Place the tray in the oven for 15 - 20 mins or until the cookies start to brown in the edges.
- After you remove them make sure you place them in a wire rack to cool and solidify before you can dig in!
TIPS
- After I finished mixing the chocolate chips & the nuts I microwaved the dough for 30 secs. It made the chocolate melt a little and chewy.
- Use the nuts as a topping to add more temptation
- Serve with Milk
