Carrot & Peas Pulav

We had an over abundance of carrots this month. Apart from the Gajar ka Halwa I had to come up with some way to get rid of the carrots. This pulav was a quick one without a lot of thought. It came out very well.

INGREDIENTS
  • Carrots - 5 - 6 medium sized (coarsely chopped)
  • Peas - 1 cup
  • Garlic - 2 - 3 pods
  • Ginger - 1 inch piece
  • Green Chilly - 2 - 3 (depends on your taste)
  • Basmati rice - 2 cups
  • Bay leaf (tej patta) - 1
  • Small Cardamom (elaichi) - 1
  • Cloves (laung) - 3
  • Cumin Seeds (Jeera) - 1 tsp
  • Salt to taste
  • Oil - 2 tbsp
METHOD
  • Coarsely grind the chilly, garlic and ginger.
  • In a pan heat the oil. Once its heated add the bay leaf, cloves, cardamom and cumin.
  • After the spices start giving out a good aroma add the ginger garlic & chilly paste and saute for a min or two. Make sure you don't burn the paste.
  • Add the chopped carrots and peas to the pan and saute for 3 mins.
  • Add the washed rice to the pan and mix well to coat rice evenly with oil.
  • Add water to this or add the whole mixture to a rice cooker and cook till the rice is done.
  • Serve with dal/ raita and papad /chips.
ADDITIONAL TIPS:
  • I used a small hand blender to chop the carrots and make the ginger garlic chilly paste
  • When you heat the oil add a drop of ghee (clarified butter) to the mix to give an extra flavor
  • If you have minted peas add that instead of normal peas.
  • You can add other veggies to this pulav.
