Carrot & Peas Pulav
We had an over abundance of carrots this month. Apart from the Gajar ka Halwa I had to come up with some way to get rid of the carrots. This pulav was a quick one without a lot of thought. It came out very well.
INGREDIENTS
- Carrots - 5 - 6 medium sized (coarsely chopped)
- Peas - 1 cup
- Garlic - 2 - 3 pods
- Ginger - 1 inch piece
- Green Chilly - 2 - 3 (depends on your taste)
- Basmati rice - 2 cups
- Bay leaf (tej patta) - 1
- Small Cardamom (elaichi) - 1
- Cloves (laung) - 3
- Cumin Seeds (Jeera) - 1 tsp
- Salt to taste
- Oil - 2 tbsp
METHOD
- Coarsely grind the chilly, garlic and ginger.
- In a pan heat the oil. Once its heated add the bay leaf, cloves, cardamom and cumin.
- After the spices start giving out a good aroma add the ginger garlic & chilly paste and saute for a min or two. Make sure you don't burn the paste.
- Add the chopped carrots and peas to the pan and saute for 3 mins.
- Add the washed rice to the pan and mix well to coat rice evenly with oil.
- Add water to this or add the whole mixture to a rice cooker and cook till the rice is done.
- Serve with dal/ raita and papad /chips.
- I used a small hand blender to chop the carrots and make the ginger garlic chilly paste
- When you heat the oil add a drop of ghee (clarified butter) to the mix to give an extra flavor
- If you have minted peas add that instead of normal peas.
- You can add other veggies to this pulav.
