Masala Bhindi / Spicy Okra (Stuffed)

Bhindi is my absolute favourite vegetable and this dry bhindi recipe goes great with just a simple jeera rice and dal. When you are just cooking for yourself and u don't wanna make something elaborate this is just perfect. Quick to make and very tasty. With my bro or my husband we get in a fight to divide it equally.

Cooking time - 7 - 10 mins


INGREDIENTS
  • Fresh Bhindi / Okra (preferably the small ones) - 20 to 25 pieces (have even pieces to avoid a fight)
  • Turmeric Powder - 1 tsp
  • Dhaniya / Coriander Powder - 2 tsp
  • Jeera / Cumin Powder - 2 tsp
  • Mirchi / Chilly Powder - 1 tsp (u can increase it 2 tsp if you like it spicy)
  • Aamchoor / Dried Mango Powder - 2 tsp
  • Salt to taste
  • Jeera / Cumin Seeds - 2 tsp
  • Saunf / Fennel Seeds - 1 tsp
  • Curry leaves - few
  • Oil 1 - 2 tbsp
METHOD
  • Wash and dry the bhindi / okra and cut the top and tip off
  • Slit the bhindi to put in the masala mixture
  • Mix all the dry powders, salt, saunf and 1 tsp of jeera in a small cup
  • Fill the silt of bhindi with this masala mix
  • In a non stick flat pan add little oil and the rest of the jeera seeds and the curry leaves
  • After the jeera is fried add the stuffed bhindi and let it cook occasionally stirring it to make sure all sides are done well... a quick way of cooking is keep a lid on so that the bhindi gets cooked fast then for the last few mins you can cook it in open pan to dry up the moisture.
  • You can use more oil to make it crispy but this is a healthier.
  • Like I said... Serve with jeera rice / chapati and simple dal tadka.
VARIATIONS
  • If you like a little sweetness the you can add a little sugar in your masala mix
  • I have also seen few of friends use desiccated / freshly grated coconut in the mix 
  • You can use the same mixture with small brinjal
