Simple Veggie Noodles
Very quick to whip up... all you need is some colourful veggies and noodles! You can do this with or without maggi noodles.

Serves - 2
INGREDIENTS
- Noodles (fresh/ long life/ Maggi) - 1 small pack
- Onion - 1 small (cut length wise)
- Garlic - 2 cloves (crushed)
- Ginger - 1" piece (roughly chopped)
- Green chilly (roughly chopped) - 1 or more depending on your taste
- Mixed veggies (semi cooked)- 1 cup (capsicum, carrot, peas, cauliflower, broccoli, beans, etc etc)
- Soy sauce - 2 tbsp
- Sweet Chilly sauce - 2 tbsp
- Oil - 2 tbsp
- Ground Pepper - half tsp (can increase quantity if you want)
- 5 spice powder 1 pinch (optional)
- Salt to taste
- Coriander to garnish
METHOD
- Get the noodles ready as per the instructions on the pack. Drain & keep ready
- Heat up the oil then add garlic, ginger and green chilly and saute for a min
- To this add onions and saute for another 2 mins
- Add the semi cooked veggies, sauces, spices to this and saute till all the veggies get a coat of the sauce. Do not add the salt in as yet... the Soy sauce gives a salty taste so you might land up with very salty noodles.
- DO NOT add water... else it will get very soggy.
- Add the noodles and combine it well with the veggie mix
- Check for salt and other spices... add more salt or chilly as per taste.
- Garnish with coriander and serve hot!
VARIATIONS
- The sweet chilly sauce actually gives a sticky effect to the noodles so you don't have to use this one... you could use even ketchup to get that effect.
- For garnish you could also use fried onion or fried tofu.
- If you have left over noodles you could convert it into spring roll... Just Roll it up in a rice paper and fry it!
