Veggie Muffin (savoury)

It is so simple... I tried this few days ago and it was a hit with my friends. It is the perfect way to include veggies in your kids meals and you can twist the taste according to the audience. Perfect for kids party... entrees... breakfast... tea party... etc etc etc


Preparation time: 10 - 15 mins
Cooking time: 15 - 20 mins

INGREDIENTS
  • Self raising flour - 1 cup (I used wholemeal flour)
  • Veggies (grated) - 1.5 cups (carrot, zucchini, corn, peas, mushroom, pumpkin)
  • Capsicum - 1 small (adds flavour & colour)
  • Olives (black or green) handful
  • Cheese (optional) - half cup - can use more than one kind... I used feta and cheddar)
  • Milk - half cup
  • Egg - 1 (mainly to bind it all together)
  • herbs - handful for flavour (I used 1 small sprig of coriander)
  • Salt to taste
  • other seasonings / Chilli / Jalepenos (optional)
METHOD
  • Put all ingredients in a bowl and fold it all together.
  • The dough should be wet and gooey but not runny.
  • If the mix is too try add some milk if its too watery then add some more flour
  • In a muffin pan grease the sides and scoop in the dough. Fill 3/4th of the cup so that it doesn't over flow.
  • You can use the cup cake paper cups but make sure you grease that too so that the dough doesn't stick to the paper while eating.
  • Before baking you can top it with an olive or herbs or cheese to make it look pretty!
  • You could add in any other veggies... herbs... chilly... jalepenos... etc to make it to your liking
  • Put the tray into a preheated oven of 200 degrees for about 15 - 20 mins or until the top of the muffin has a golden brown colour. 
  • Make sure that you check if the muffin is cooked by sticking a toothpick or fork in it and if it comes out clean they are ready!!!
  • Serve with your favourite sauce.
