Eggless Banana Walnut Bread
Had 2 over ripe bananas left and no one wanted to eat it so decided to turn that into something that everyone will eat... turned out great!!!

- Ripe Bananas - 2
- Self raising flour - 1 cup (I used wholemeal self raising flour)
- baking soda - quarter tsp (if you are not using self raising flour)
- vanilla essence - 1 tsp
- Raw Sugar - 4 tbsp (I like less sugar you can put more sugar if you want)
- Salt - 2 pinch
- Walnuts: - broken - half cup; halved - 4 or 5 for garnish / decoration
- Oil - 4 tbsp
- Milk / water - quarter cup
- Yogurt -2 tbsp
- butter / oil to grease the pan
METHOD
- Mash the banana with a fork or using a stick blender.
- To the mashed banana add vanilla essence, salt, sugar, oil, yogurt and milk/water and mix well.
- Add the flour to the wet mix and mix well so you get a gooey dough. Make sure the dough is not very watery if it is add a lil more flour to the mix.
- Add the broken walnuts to the mix and mix well.
- Grease a bread loaf pan or a cake pan and pour in the mix.
- Turn the oven to 180 degrees and put the mix in for 30 - 40 min / till the bread is done. Check with a skewer or fork before you take it out of the oven.
- Once you get out out of the oven leave it on the wire rack for a little while for it to cool down so that its easy to cut it in slices.
- Enjoy it hot or cold with you afternoon tea or a good dinner! You can serve it with ice cream or custard to add to the taste.
VARIATIONS
- Instead of walnuts you could use almonds, pecan nuts or cashews
- You could add some raisins/ sultanas to the mix to add to the sweetness.
- If you like a hint of spice you could add cinnamon or nutmeg to the mix.
