Veggie Puff

Puff pastry is just amazing... Its so versatile you can make it savoury or sweet and it will still vanish just as quickly. Keep a pack of frozen puff pastry in your fridge you can make something to eat when you feel like having something yummy! This one is a great party or tea time snack.



Prep time - 10 - 12 mins
Cooking time - 10 mins or less depending on the filling
Baking time - 15 mins
Makes - 4 pieces

INGREDIENTS

  • Puff pastry sheet - 1
  • FILLING ( this is what I made... look at variation for other options)
    • Potato - cubed - 1 - medium sized
    • Onion - 1 - small - sliced
    • Tomato - 1 - cubed or 1 tbsp conc tomato paste
    • Garlic - 1 clove - finely chopped/ paste - half tsp
    • Chilly - 1 (increase if needed or avoid completely)
    • Baby Peas - quarter cup
    • Oil - 1 tbsp
    • Turmeric powder - quarter tsp
    • Salt to taste
    • Cumin seeds - 1 tsp
    • Cheese - shredded - half cup
METHOD
  • Put the potatoes in a microwave safe bowl with water and put in in for 5 - 7 mins. Till its cooked. If you are not a fan of the microwave pot in a pot of water a let it boil till its cooked. Drain the water and keep aside
  • In a pan heat oil... add cumin seeds and turmeric powder
  • Once the cumin sputters add the garlic and chilly and saute for a minute
  • Now add the Onion and saute till its translucent.
  • Add the tomato / tomato paste and salt and saute till the raw smell of the tomato disappears. You don't have to wait long if you are using the paste.
  • Add the potatoes and peas and saute till the tomato mix covers the potatoes well. Let the mix cool
  • Take out a frozen sheet of puff pastry and let it thaw 5 mins. Cut it into 4 squares
  • Spoon equal mix of curry in every square top with cheese and roll it up. you can seal all ends or leave one end open like I did.
  • Make sure that the curry mix cools down a little before you spoon it into the pastry sheet as a hot mix will make handling the pastry sheet difficult.
  • Bake this in a 200 degree oven for about 15 mins or till the puff look golden brown.
  • Serve hot with sauce of your choice and a hot cup of tea or coffee.
  • Its a great party dish. 
  • You can make the curry mix of your choice ready and freeze it and use it for another day.
VARIATIONS
  • This is an excellent way to feed kids veggies... you can add any veggies to the mix. Replace the potatoes with a cup of mix vegetables
  • Add your twist to the masala.
  • This is also a good way of finishing some left over veggies / even cooked stir fried curries (non gravy ones)
  • If you don't have veggies you can just fill the pastry sheet with cheese and cracked pepper or chutney and cheese. Make smaller squares of the pastry sheet or triangles.
  • You can also fill it in with chocolate or fruits. With this make sure you seal the ends well because they might flow out.
  • One of the easier ways to seal / bind a puff pastry sheet is with an egg. Lightly beat an egg and keep in a bowl. As you roll the sheet brush the egg on the sheet.
