Zucchini Patties
This recipe is a contribution from a very dear friend Devaki Kher. They are yummy a very simple to make.

Here's an Healthy and extremely QUICK AND EASY to make shredded Zucchini patties. Delighted to share this recipe that and it tastes great.
INGREDIENTS:
- 2 Large Zucchini
- 3 tbsp Rice Flour
- 1/4 tsp Black Pepper
- 1/4 tsp Oregano
- 1/2 tsp Garlic powder or Garlic paste
- 1/4 tsp Basil leaves (dried is fine as well)
- 1/4 tsp Chilli flakes - optional (depends on your level of spice. But avoid adding much)
- Salt to taste
- 1 tbsp Lemon juice
- Olive Oil for shallow frying
- Optional : You can add mixed herbs powder (2 pinches)
METHOD
- Wash and Shred zucchini using the grater. Do not peel the zucchini as the skin of the zucchini is the one which holds the most nutrients
- Squeeze out all excess water from the shredded zucchini by holding out in your palms
- Now sprinkle some rice flour over zucchini shreds.
- Season the mixture with black pepper, garlic powder/paste.
- Then add oregano, basil leaves, chilli flakes.
- Finally add salt and lemon juice.
- Gently mix the mixture using fork.
- Now grease the pan well with some olive oil.
- Put a spoonful of this zucchini mixture in pan giving it a round patty shape.
- Shallow fry till it gets deep golden color from all the sides. This does not require much oil at all.
- This can be squeezed in a sandwich/ wraps or you can have it just as it is or with little of tomato ketchup.
