Vegan Mango Mastani

Mastani is a thick milkshake topped with ice cream / whipped cream, nuts, fresh fruits  and a glazed cherry. Its very popular drink that originated in Pune. Some believe the name originated from the name of the very beautiful wife of Baji Rao Peshwa, Mastani.

It is very satisfying drink on a hot summer day.

I made my version of a vegan Mastani to kickstart the new year. Its super easy to make and depending on what ingredients you add you can make it as healthy as you want.


INGREDIENTS
  • Ripe Mangoes, de-skinned & chopped - 3 - 4 cups
  • Non - Dairy milk (coconut, almond, soy, rice) - 1 and half cups
  • Coconut cream - 1 can, refrigerate for 3 hours atleast 
  • Sweetener of your choice - for the whipped cream - 1 to 2 tbsp (add according to your taste)
  • Roughly chopped nuts (almond, cashew, pistachios, walnuts) - 1/2 cup
  • fresh cherries / pomegranate for garnish
  • Ice cubes - 10 (optional)
   METHOD
  • Keep a few fresh mango pieces aside for garnish. Add the rest of the mangoes in a blender with milk, ice. Check the sweetness of your mango if you think you will need more sweet then add maple syrup or raw sugar and blend to make a smoothie
  • When you open the coconut cream can do not shake it. Open it carefully and only take the cream not the water. When you put the can in the fridge the cream will settle in top of the can.You can retain the water for soups or other smoothies.
  • Add sweetner of your choice to the cream and with a hand blender whip the coconut cream till it gets fluffy.
  • In a glass pour the smoothie, top it with the coconut cream, chopped nuts, fresh fruit and finally cherry / pomegranate on top. You can also add a tsp of maple syrup if you think its not sweet enough.
  • This is make 2 to 4 servings depending on the size of your glass.
  • Serve chilled.
