Chocolate Chip Cookies - Dairy and Egg Free
Now an then I go vegan for a few months. It helps me reboot my system faster especially during winter months it helps getting out of the cold and cough faster. But temptation is a killer and there are days I would get tempted with cookies in the supermarket. So I decided to find a way to have my cookies without eggs and dairy. Another plus point it I can control the amount of sugar that goes into it. I tried a few recipes online and this is the amalgamation of all of that.
Baking time – 20 to 25 mins
Makes – 8 to 10 cookies (depends on the size you want)
INGREDIENTS
- 1 cup - flour (wholemeal / gluten-free)*
- Half cup dairy-free butter - nuttlex / use coconut oil. You are free to use the regular butter if you are not vegan
- ¼ cup - sugar / sweetener of choice**
- 1 Tsp - Vanilla essence
- 1 pinch Salt
- 1 pinch baking soda
- 1 cup dairy free chocolate chips / cacao nibs ***
- 1/3 cup - roughly chopped nuts - almond/ macadamia/ walnut / pecan (optional)
- 1 tbsp of water or milk of choice (more if needed)
- 2 tbsp corn flour (optional)
* if you use gluten free flour add a little extra butter and water because they don''t hold together very well it will need extra binding agent & do not use cornflour with gluten free flour.
**if you are using other sweeteners then please check how much is equal to quarter cup of sugar.
*** cacao nibs are not at all sweet. If you are looking for a sweet treat then you could add more sweetener
METHOD
- Pre - heat the oven 175 degrees (fan -forced)
- Make sure that the butter / oil is soft so that it will blend easily.
- In a mixer or with the whip attachment of a blender blend the sugar & the butter till it combines well and becomes a little fluffy.
- Add the vanilla essence and milk / water to this blend and mix well.
- Sift the flour, corn flour with the baking soda and mix that to the butter mix
- Once the flour is combined well with the butter add the chocolate chips and the nuts.
- The dough needs to be just a little wet but not runny. If it is dry then add little bit of water- 1 tbsp at a time. You could add more butter or oil but I prefer not to add lot of oil. If you add lot of water it would turn into a cake
- After it is combined make small lime sized balls with the dough.
- Place these on baking paper 3 to 4 inches apart and flatten them a little with your hands
- Top with some whole nuts if you like.
- Place the tray in the oven for 20 – 25 mins or until the cookies start to brown in the edges.
- After you remove them make sure you place them in a wire rack to cool and solidify before you can dig in!
- Enjoy your crumbly cookie.
